It’s Time

From what I hear, it’s the perfect time to buy a house. That is, IF you have good credit and some extra cash. If I had extra cash I’d buy me one, well, it would actually be for my son for when he grows up. I would rent it out till then.
Right up there with getting a new place is moving into the new place! Since I don’t have a big truck, we;d have to go the truck rental way. I would never have a company pack my belongings though, I would do that myself. ABF U-Pack Moving would provide the rental truck at my house and I would pack all my special boxes in just the way I want. I would load them and stack to make sure they are all safe and sound. Then ABF would drive the fully loaded rental truck to my new place. How nice, as I am sure I could not drive one of those big honkers anyways! You can always check them out with the Better Business Bureau too, their ratings are top notch!

Roasted Vegetables

Since I am now doing Weight Watchers, I am constantly searching thier site for recipes. I found this one and will have it tonight for dinner. It serves 8, but I will prob eat enought for 4 servings. But thats okay! as it is 0 WW points and only 43 Calories per Serving. Yum ! !

4 sprays olive oil cooking spray, divided
2 medium sweet red pepper(s), cut into 8 thick strips
1 medium green pepper(s), cut into 8 thick strips
1 medium summer squash, cut thickly on the diagonal
1 medium zucchini, cut thickly on the diagonal
1 medium red onion(s), cut into large wedges
12 oz canned artichoke hearts, without oil, drained and halved
1 Tbsp thyme, fresh, minced
1/2 tsp table salt, or to taste
1/4 tsp black pepper, freshly ground, or to taste

Preheat oven to 450ºF. Coat 2 large baking sheets with cooking spray.
Arrange peppers, squash, zucchini, onion and artichokes on prepared baking sheets and coat with cooking spray; sprinkle with thyme, salt and black pepper.
Roast until vegetables are tender and golden brown, shaking pan once or twice during cooking, about 25 to 30 minutes.

Bragging

We had Parent/Teacher Conference last night. Wow. I must have thee best kid I swear! All his teachers only have wonderful things to say about him. He is really growing up to be a terrific kid (soon I will need to change that and say ‘adult’). He will do more in life than sell office supplies for sure! Right now, he has A’s in every class except Math, which was a B+. and we figured out the reason why last night; he is missing 2 assigments. He was placed in a higher Math class the 2nd week of school, so thats why he missed those assignments, he never got them! The Teach is totally cool and said he can make them up and turn them in any ol’ time, no rush, just whenever. I’m like, wow . . . my teachers were never that cool. But then again, I was never that smart in Math either.
So Kudos to my very smart son ! ! His treat today will be Carl’s Jr for dinner. Hey, its what he wanted and we never ever go there. and no . . . I will not eat there, I get Salad for dinner, heeheehee

Well I renewed my subscription for Weight Watchers On Line. There was no fee to re-inroll, but it does cost about $14 per month. I just cant take this anymore. Last night I ate Pizza. I wont say how much Pizza, but it was a lot. I don’t know whats wrong w/me! I just cant seem to control my eating anymore.

I was watching Biggest Looser last night, sitting there, thinking (eating Pizza) . . . these people dont know how to eat healthy, they dont have the support, dont know how to cook healthy. I, however, know all this stuff, have the knowledge and support, but I just dont do it! Why dont I do it !?!?!? I do not know.

So now I am back on WW. I lost 44 pounds with them about 4 years ago. I know I can lose what has become almost 15 pounds with them again. I think it just might be mental on my part. I dont do the WW meetings; I do it alone. Just Me. For Me. and Only Me. Thats how I did it before and thats how I have to do it again. End Of Story.

Taking It off Together #15

Well I lost 1 lb, but gained it back just last night! I went out and bought some Candy Corn for Halloween, and ate most of the entire fetchin’ bag yesterday. I have got stop doing that!! Halloween always hurts me every year. My son does not eat Candy, he just doesnt like it, wierd, but I of course, happen to love Candy! sheesh. I am back on track today, mostly cuz there is no candy left in the house!
Anyways, here is the report for this week. Congrats Ladies!

Bodies

Brain

Our family went to the The Body Worlds show here in SLC yesterday. Right now there are four shows around the world and we were lucky to get one to stop by our little town for a few month. It was pretty enlightning. The show is about Plastination. In short, it’s when they use polymers and fluid plastics to make a type of mold of the human body from the inside out.
The show was pretty much self guided and took a while to get through. At the end my feet and back hurt and I was wishing for some nice home theater seating to rest my butt in. But all in all, it was well worth seeing. Oh, and we went to an all-you-can-eat buffet afterwards, which was very very nice!

Fall

Today is the First Day of Fall. It sure feels like it out here. Its about 55 degree, cloudy, rainy and fetchin’ cold. I, of course, had no clue that it was supposed to rain today, so my bedroom window is wide open. sigh. I really need to start watching the weather. The kiddo has been in a ‘Brawl’ mode, and had been playing way too much Wii. I read when he plays and the time goes by fast and I miss the news.
I wonder if it is snowing in the mountains . . .

Rodents

We have two new additions to our family. Let me tell you that I am not a happy camper on this topic. My son purchased them, including all the accessories with all his own money. The agreement is that I will have NOTHING to do with them. I dont care much for Gerbils. But here are a few pics anyways. As you can see, we are having Cat problems right now. ugh.
